Mushroom tagliatelle recipe

This simple pasta meal is a cheap way to fill the family – and with a short cooking time, it’s a double winner.

Serves: 4 people
Prep time: 10 minutes
Cooking time: 15 minutes


400g dried tagliatelle pasta
1 tbs olive oil
500g sliced mushrooms (Swiss brown, enoki and button)
2 garlic cloves, crushed
1 tbs plain flour
500ml cream
Grated fresh parmesan, to serve


  1. Cook the pasta in a large saucepan of boiling salted water, following packet instructions or until just tender. Drain and return pasta to pan.
  2. Meanwhile, heat oil in a large saucepan and add mushrooms. Cook over high heat, stirring, for 3-4 minutes or until tender. Add garlic and cook for another minute.
  3. Add flour to mushroom mixture and stir. Remove pan from heat and slowly stir in cream until smooth. Return pan to medium heat and cook while stirring for 3-4 minutes or until mixture thickens.
  4. Toss into pasta and serve topped with grated parmesan.

Tip: Add a little milk if you need to thin the sauce.
