Hoisin chicken cups recipe

Looking for an appetiser that can be ready in under 15 minutes? This recipe is just the ticket.

Serves: 10 people
Prep time: 10 minutes
Cooking time: 5 minutes


500g chicken breast fillet, chopped
¼ cup hoisin sauce
2 tbs lime juice
1 tbs sesame oil
230g can sliced water chestnuts, chopped
¼ cup chopped fresh coriander leaves
2 heads baby cos lettuce, leaves separated
1 Lebanese cucumber, halved lengthways and sliced


  1. Combine chicken, hoisin sauce, lime juice and sesame oil in a bowl.
  2. Heat barbecue over medium heat. Cook chicken for 4-5 minutes, turning, or until golden and cooked. Add chopped water chestnuts and sprinkle with coriander.
  3. Place cucumber into the lettuce leaves and fill with the hoisin chicken.

Top tip: If you like chilli, slice some red or green chillies and sprinkle over the chicken.
